Carra has over a decade of experience in the Dallas Catering & Special events industry. She began her career over 10 years ago working for one of Dallas's premier off-premise caterers on some of Dallas's most high profile events. She transitioned from there to become the Catering & Special events Director for one of Dallas's most well - known and successful restaurant groups where she worked to build their catering division from the ground up. She brings her past experience and love for events and building client relationships to the founding of Proper Catering & Events.

Carra's ability to custom design and execute a full service event for nearly any occasion in partnership with her clients is a part of what makes working with Proper such a unique experience!

My mom would have Tamales sent from her hometown in Arizona every year for Christmas, they are still the best I have ever had.

What was your first job?

Sales floor at Neiman Marcus. Was not a profitable career choice for me, I spent every dime I made in the store.

Favorite holiday:
Thanksgiving. I love that its centered around food, family & friends without the pressure of gifts. Its strictly about enjoying a great meal (and lots of wine) with people you love and being thankful.

Favorite smell:
Gardenia

What do you love most about what you do?
Getting to be a part of some of the most special moments in peoples lives and helping them celebrate- weddings, birthday parties, business openings - it's such a great thing to be able to share in with people and makes all the hard work worth it.

Renato De Pirro

Renato De Pirro was born in Tuscany and now, after a brilliant career in the most renowned kitchens of the USA, he has become the Chef and partner of PROPER Catering & Events in Dallas. De Pirro, who graduated from the IPSAAR Spoleto, began his career at the Locanda di Ansedonia in Tuscany and then managed his restaurant La Ribotta.

In 1999 he moved to the USA where he ran, as Executive Chef, the kitchens of the Terra Rossa, respectively, in the Red Rock Resort & Casino and the Osteria del Circo at the Bellagio Resort in Las Vegas, Nevada. In 2010 he moved to Houston, Texas, to head the kitchens of the only 5-star luxury Italian Hotel, Hotel Granduca. In Dallas he covered the position of Corporate Chef of the prestigious Lombardi Family Concepts Restaurants.

Renato has been a featured chef on numerous regionally and nationally televised cooking shows, including the Food Network, and was a Silver medalist in the World Cup of Culinary Arts. He also won the Third Annual Bertolli Sous Chef Award, which honors the rising stars of the culinary world and he is Italian Master Chef certified by “Accademia Barilla.”

John Sensibaugh

Starting his culinary exploration in Dallas, Chef Sensibaugh has always been interested in food. His passion started at a young age in his mothers kitchen learning classic southern dishes he still has a love for today.

After working in various kitchens across the DFW area and graduation from Culinary school he set out to Las Vegas. He was working as a Sous chef for Culinaire international in Dallas at Ristorante Nicola and went to work for Station Casinos at Terra Rossa at Red Rock and resort. Little did he know the Chef who opened Terra Rossa would end up being his now business partner Renato. After some time there he befriended Carlos Buscaglia and moved to Austin to open his restaurant.

After a few years with Buscaglia as his exec sous he went to work for FRC which he worked at North Italia. He wanted to come back to Dallas to be closer to his family so decided after many years away to move back. He took the job as Executive Chef for Saint Ann. He had a long time friend tell him Lombardi Family Concepts was looking for an assistant Corp chef which he applied and met Renato (Corp. Chef). He left Saint Ann and found his new job gave him many new challenges but something always seemed to be missing. He wanted to be his own boss and the opportunity presented itself in the form of Proper.
